Thanks to their high concentration of Vitamin C, folate, and antioxidants, beets are a delicious resource for your skin. The vitamins and minerals found in beets have anti-inflammatory properties and are excellent for soothing a variety of skin troubles--even slowing the development of wrinkles.

In an article written for Foodtrients, Dr. Rosenburg states, "It was shown that the high levels of folates and antioxidants can decrease the depth and severity of skin wrinkles by 60%!  This is best accomplished by eating beets (or drinking beet juice) as well as by applying beet juice topically, directly to skin."

 As if decreasing wrinkles by 60% weren't enough, beets have also been linked to cancer prevention and even improved athletic performance. According to the Academy of Nutrition and Dietetics, "Consumption of nitrate-rich, whole beetroot improves running performance in healthy adults. Because whole vegetables have been shown to have health benefits, whereas nitrates from other sources may have detrimental health effects [individuals should] obtain nitrates from beetroot."
